This Caturra lot was selectively hand-picked, as the cherries reached optimal ripeness. The whole cherries then underwent a 120-hour anaerobic fermentation under controlled conditions, before being dried on raised beds exposed to the sun. Grown at 1,650 m altitude at the San Crispín farm, in Villa Rica, in the Pasco region, this Natural-processed Caturra offers a fruity, sweet cup, marked by a wine-like acidity and notes of dried fruit, elderberry, plum and orange. Touches of honey, sugar and sugar cane round out the profile, supported by a silky body and a sweet finish.
